Welsh Rarebit

1 lb grated cheddar cheese
1 tbsp butter
1 cup beer
1 egg
1 tsp Worcestshire sauce
1 tsp salt
½ tsp paprika (optional)
A few grains red pepper
¼ tsp curry powder or a pinch of saffron (optional)
¼ tsp dry mustard


In microwave, melt butter in beer. Add cheese, a little at a time, melting each batch in microwave. Combine remaining ingredients and add. Heat until rarebit forms slight froth on surface. Serve immediately over toast points.

Alternative: Combine with ½ pound cooked noodles and 1 to 2 cups diced cooked ham.
