Mayonnaise without seed/vegetable oil

1 cup extra light olive oil (200g)
1 large egg
1 tsp salt
2 tsp lemon juice (9g, juice of ½ lemon)
1 tsp white wine or cider vinegar (4g)
½ tsp dijon mustard (4g)


  • Place all ingredients into a jar and blend with an immersion blender until thickened and smooth.
  • Cover and store in the refrigerator for up to a week.
