Ingredients
| 1 | large egg |
| 1 | cup extra light olive oil |
| ½ | tsp dijon mustard |
| 2 | tsp lemon juice (juice of ½ lemon) |
| 1 | tsp white wine or cider vinegar |
| 1 | tsp salt |
Directions
Place all ingredients into a jar and blend with an immersion blender until thickened and smooth
